Why am I eating dessert for breakfast !? This smooth and creamy mocha pudding is the best thing I ever ate.
Adding the layers of fresh cherries, flaked coconut, and bananas reminded me of eating a delicious banana split. It’s so divine.
This is an overnight chia pudding and it’s so easy to make.
As a mom of two toddlers, this makes prepping possible the night before.
There are a few ingredients you will need to make this breakfast.
3 tablespoons chia seeds
1/4 teaspoon vanilla extract
1 tablespoon pure raw unfiltered honey
1 cup chocolate oat milk
2 tablespoons cold brew coffee
Mix all these ingredients and soak overnight.
When you wake up to assemble your breakfast you will need
1 banana sliced
1 1/2 tablespoons flaked coconut
1/4 cup cherries pitted and halved
Layer the bottom with about two tablespoons of your mocha pudding.
Place the sliced bananas in a circle rotation around your glass. Place the cherries upright against the bananas and in the center of the layer add 1/2 tablespoon flaked coconut.
Layer again with the mocha pudding and repeat.
The top layer will be using the balance of the pudding. Then top with the banana, cherries, and coconut. Dust lightly with cacao powder.
When that rich decadent pudding hits your tastebuds you will be so happy you tried this.
It's like a tropical paradise in a glass.
If you wanted to use this for 2 servings you can divide the pudding between two small 4 oz ball jars.
