Berry Puffy Oven Pancake

If you are like me and you enjoy quick and easy recipes you can scroll down to try this simple breakfast.

This is a one-bowl mix.

Yep, that's right. You are going to place all your ingredients into one bowl then directly into the baking pan.

It’s light and airy but you need to serve it as it comes out the oven. so get those plates ready.


2 tablespoons butter, melted

2 large eggs

1/2 cup all-purpose flour

1/2 cup plant-based milk

1/4 teaspoon salt.

For the toppings

2 strawberries sliced

2 tablespoons blueberries

2 tablespoons brown sugar.


Preheat oven to 400F.

1. In a medium-sized bowl add your eggs and whisk lightly. Add the flour, salt, and milk. Whisk gently until all ingredients are combined.

Do not overmix.

2. Place melted butter into a 9” pie dish. Brush the butter evenly around the bottom and sides of the dish.

3. Sprinkle brown sugar and then arrange the strawberries and blueberries evenly on top of the melted butter.

3. Pour the batter over the berries and sugar.

Bake about 25-30 minutes or until the batter becomes puffy and golden brown.

Flip the pie dish over a warm plate and serve with honey or maple syrup and garnish with fresh berries.

Serves 2-4 people
